Food becomes comforting, and the smell of cinnamon is a craving I didn’t possess this spring. I love pumpkin! There, I said it! I don’t care that pumpkin spice has been thrown into every food out there! I don’t care that it is overkill, because I love pumpkin! Sweet potatoes and squash are right up there as well. When I was a little kid, I proclaimed these foods as my favorites. I probably shouted it out even more, as it was, well, kind of weird for these to be a child’s favorite foods. I think I thought it made me a unique person.
At Half Baked we pride ourselves when we come up with fantastic cupcake creations. Our pumpkin cupcake was one of our very first cupcakes. It is adorned with cream cheese buttercream, and sprinkled with cinnamon. We didn’t rip open a spice cake mix, and throw in some pumpkin and call it an accomplishment. You will never scream dry at our cupcakes, and the flavors of autumn will flood your mind with childhood memories. We have a gluten free version as well, and if you are a gluten free lover, or not, you truly won’t know the difference. At some point we added a pumpkin chip cupcake, only because once I tried pumpkin chip bread, I wondered- where has this been my whole life?! Filled with mini chocolate chips, the cupcake is topped with cinnamon dulce buttercream that screams hello fall! Welcome to my mouth!
This fall, while you are trying to look trendy, proudly ordering a maple sriracha latte with extra sprouts, I’m going to say- yes, give me a pumpkin spice latte, and add a pumpkin cupcake to that order. I’m going to ride the pumpkin spice bus all the way through fall. For me it’s not a trend, it’s just heaven in my mouth, and part of everything I loved as a child.
