As I walked around my house after the holidays, I noticed a rogue empty gift sack lying where there had just been a room full of family. My house was filled with the magic of Christmas, and all the sparkle that comes with it. Now, like many others, I am holding out for spring. J I need some sunshine in my life, I told myself. I decided to think of baking, and that led me to the sunny place I wanted to be. I decided to make bright, sunshiny lemon muffins. My only dilemma was- I didn’t have the perfect lemon muffin recipe.
You have to know, that I am a person who is always searching for the perfect recipe. It took about ten years to be satisfied with my potato salad recipe. I didn’t feel I had ten years to master a lemon muffin recipe if I wanted to feel the spring sunshine on my pale face soon, so I thought I’d better get cracking.
I can’t lie. It did take me three days to accomplish my goal. I made so many lemon muffins, that I couldn’t eat lunch. I had to compare lemon muffins! I ate lemon muffins, and then I ate some more. I am in full spring mode! I have myself believing there will be new plant sprouts popping from the dirty snowy soil any day now. Ha!
I searched the internet, I searched cook books, and then I decided to just think about what I wanted my lemon muffin to be. As a former 4-H member and leader, I wanted to think about the flavor, the texture, and the appearance. You just can’t take the 4-H out of a girl. Do I want it to have icing? Yes! I wanted a tangy real lemon flavor. I am not sure how many combinations I tried. There was buttermilk used, and then sour cream, or maybe whole milk? I bought lemons, and then ran out, and I had to tell myself at ten at night, that I could wait until morning to restock my lemon supply. Finally I had a perfect, big, beautiful delicious lemon muffin that just screamed spring to me! The icing was a whole other task. It took several combinations to master a tangy, yet pretty white icing, which had the wonderful true lemon flavor my mind was wishing for. To top it all off, I knew that I could easily add blueberries, or black raspberries to this lemon happiness.
I know I am going to have to wait a few more months for spring to actually make an appearance; I have to get through the forecasted snow arriving, along with everyone else in the Midwest. I don’t have a winter get away planned, so for now- I have the perfect lemon muffin.
